Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 3/4 cup unsweetened shredded coconut

– 3/4 cup granulated sugar

– 2 large eggs

– 1/2 cup unsalted butter, melted

– 1 teaspoon vanilla extract

– Powdered sugar for dusting


Instructions

1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, baking powder, and salt.

3. In a separate bowl, combine the shredded coconut, sugar, eggs, melted butter, and vanilla extract. Mix until well combined.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

5. Using a small cookie scoop or spoon, drop the batter onto the prepared baking sheet, spacing them about 2 inches apart.

6. Bake for 15-18 minutes, or until the edges are golden brown.

7. Remove the cakes from the oven and let them cool on the baking sheet for 5 minutes.

8. Dust the cooled cakes generously with powdered sugar before serving.

Notes

These Portuguese Coconut Cakes can be stored in an airtight container at room temperature for up to 3 days. For a chewier texture, you can substitute part of the all-purpose flour with almond flour or coconut flour.
