Ingredients
– 6 slices bacon, diced
– 1 onion, diced
– 3 cloves garlic, minced
– 3 pounds Russet potatoes, peeled and diced
– 4 cups chicken or vegetable broth
– 1 cup heavy cream
– 1 teaspoon dried thyme
– 1/2 teaspoon dried rosemary
– Salt and black pepper to taste
– Chopped chives or green onions for garnish
Instructions
1. – In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy, about 8-10 minutes. Remove the bacon from the pot, reserving the bacon fat.
2. – Add the diced onion to the bacon fat and sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute, until fragrant.
3. – Add the diced potatoes and chicken/vegetable broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
4. – Using an immersion blender or regular blender, puree about half of the soup until smooth. Return the pureed soup to the pot.
5. – Stir in the heavy cream, dried thyme, and dried rosemary. Season with salt and black pepper to taste.
6. – Serve the Potato Bacon Soup hot, garnished with the reserved crispy bacon bits and chopped chives or green onions.
Notes
For a thicker soup, you can add an additional 1/4 cup of heavy cream or let the soup simmer for a few more minutes. If you prefer a chunkier texture, mash or puree only a portion of the soup.
