Description

Ingredients

– 1 (15 oz) can pumpkin puree

– 1 cup shredded gouda cheese

– 1/2 cup ricotta cheese

– 1 egg

– 1 teaspoon dried sage

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 18 jumbo pasta shells

– 1 (24 oz) jar marinara sauce


Instructions

1. 1. Preheat oven to 375°F.

2. 2. In a medium bowl, mix together the pumpkin puree, gouda cheese, ricotta cheese, egg, sage, salt, and pepper until well combined.

3. 3. Cook the pasta shells according to package instructions until al dente. Drain and let cool slightly.

4. 4. Stuff each shell with the pumpkin-cheese mixture.

5. 5. Spread 1/2 of the marinara sauce in the bottom of a 9×13 baking dish.

6. 6. Arrange the stuffed shells in the baking dish and top with the remaining marinara sauce.

7. 7. Bake for 25-30 minutes, or until the shells are heated through and the cheese is melted.

8. 8. Serve hot, garnished with additional fresh sage if desired.

Notes

For a creamier filling, add an additional 1/4 cup of ricotta cheese. For a spicier twist, mix in a pinch of crushed red pepper flakes. These stuffed shells also reheat well, making them a great make-ahead meal.
