Ingredients
– 2 cups (250g) all-purpose flour
– 1 teaspoon salt
– 1 tablespoon (12g) granulated sugar
– 1 packet (7g) active dry yeast
– 3/4 cup (180ml) warm water
– 1 cup (200g) mashed purple sweet potato
– 2 tablespoons (30ml) olive oil
Instructions
1. 1. In a large bowl, whisk together the flour, salt, sugar, and yeast.
2. 2. Add the warm water, mashed purple sweet potato, and olive oil. Stir until a shaggy dough forms.
3. 3. Turn the dough out onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic.
4. 4. Place the dough in a lightly greased bowl, cover, and let rise for 30 minutes.
5. 5. Punch down the dough and divide it into 12 equal pieces. Shape each piece into a smooth ball.
6. 6. Place the buns on a parchment-lined baking sheet, cover, and let rise for an additional 15 minutes.
7. 7. Preheat the oven to 375°F (190°C).
