Ingredients
– 1 cup unsalted butter, melted
– 2 cups granulated sugar
– 4 large eggs
– 1 teaspoon vanilla extract
– 3/4 cup all-purpose flour
– 1/2 cup unsweetened cocoa powder
– 1/2 teaspoon salt
– 8 ounces cream cheese, softened
– 1/4 cup granulated sugar
– 1 egg
– 1 1/2 cups fresh raspberries
Instructions
1. Preheat the oven to 350°F. Grease an 8×8-inch baking pan.
2. In a large bowl, whisk together the melted butter and 2 cups of sugar. Beat in the 4 eggs, one at a time, then stir in the vanilla.
3. In a separate bowl, whisk together the flour, cocoa powder, and salt. Fold the dry ingredients into the wet ingredients until just combined.
4. In another bowl, beat the cream cheese with the 1/4 cup of sugar and 1 egg until smooth.
5. Spread half of the brownie batter into the prepared pan. Dollop the cheesecake mixture on top and swirl it into the brownie batter using a knife. Top with the fresh raspberries.
6. Bake for 30-35 minutes, until the center is almost set. Allow to cool completely before cutting and serving.
