Ingredients

– 1 cup unsalted butter, softened

– 1 cup granulated sugar

– 2 eggs

– 1 teaspoon vanilla extract

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 3 cups fresh raspberries


Instructions

1. – Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.

2. – In a large bowl, cream together the butter and sugar until light and fluffy.

3. – Beat in the eggs one at a time, then stir in the vanilla.

4. – In a separate bowl, whisk together the flour, baking powder, and salt.

5. – Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

6. – Spread half the dough into the prepared baking pan, pressing it down evenly.

7. – Arrange the fresh raspberries in a single layer over the dough.

8. – Crumble the remaining dough over the top of the raspberries.

9. – Bake for 30-35 minutes, or until the top is golden brown and the raspberries are bubbling.

10. – Allow to cool completely before cutting into bars.

Notes

– For a crisper crumble topping, you can refrigerate the remaining dough before crumbling it over the raspberries.

– Substitute other berries, such as blackberries or blueberries, for the raspberries if desired.

– Store leftover bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week.
