Ingredients

– 2 cups all-purpose flour

– 1 cup vanilla protein powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, chilled and cubed

– 1/2 cup cold water

– 2 cups fresh raspberries

– 1/4 cup granulated sugar

– 1 tablespoon cornstarch

– 1 egg, beaten

– 2 tablespoons powdered sugar


Instructions

1. In a large bowl, whisk together the flour, protein powder, and salt. Cut in the chilled butter using a pastry blender or two forks until the mixture resembles coarse crumbs.

2. Gradually add the cold water, mixing until the dough just begins to come together. Gently knead the dough a few times to form a smooth ball. Divide the dough in half, shape each half into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

3. In a medium bowl, gently toss the raspberries with the granulated sugar and cornstarch.

4. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

5. On a lightly floured surface, roll one dough disk into a rectangle about 1/8-inch thick. Cut the dough into 6 equal rectangles.

6. Place a spoonful of the raspberry mixture onto the center of 3 of the rectangles. Top with the remaining 3 rectangles and crimp the edges with a fork to seal.

7. Transfer the pop tarts to the prepared baking sheet. Brush the tops with the beaten egg.

8. Bake for 18-20 minutes, or until the pop tarts are golden brown. Allow to cool for 5 minutes, then dust with powdered sugar.

Notes

For a richer flavor, you can use a combination of all-purpose flour and whole wheat flour. You can also experiment with different fruit fillings, such as blueberry or strawberry.
