Description

Ingredients

– 16 ounces cream cheese, softened

– 1 cup granulated sugar

– 2 eggs

– 1 teaspoon vanilla extract

– 1/4 cup all-purpose flour

– 1 cup fresh raspberries

– 1 cup white chocolate chips


Instructions

1. Preheat the oven to 350°F. Grease an 8×8-inch baking pan.

2. In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla and flour until just combined.

3. Spread half the cheesecake batter into the prepared pan. Scatter the fresh raspberries over the top, then dollop the remaining cheesecake batter over the raspberries and use a knife to swirl the raspberries into the batter.

4. Sprinkle the white chocolate chips evenly over the top.

5. Bake for 30-35 minutes, until the center is almost set. Allow to cool completely in the pan before cutting into bars.

Notes

For a more pronounced raspberry flavor, you can add 1-2 tablespoons of raspberry preserves to the batter. These bars can be stored in the refrigerator for up to 5 days.
