Description

Indulge in a delightful and creamy Raspberry & White Chocolate Mousse that’s perfect for any occasion. This no-bake dessert combines the tart sweetness of fresh raspberries with the rich, velvety texture of white chocolate, creating a heavenly treat that’s sure to impress.


Ingredients

– 12 ounces fresh raspberries

– 8 ounces high-quality white chocolate, chopped

– 1 cup heavy cream

– 1/4 cup granulated sugar

– 1 teaspoon vanilla extract


Instructions

1. In a medium heatproof bowl, melt the white chocolate over a double boiler or in the microwave, stirring frequently until smooth. Allow to cool slightly.

2. In a large bowl, beat the heavy cream and granulated sugar with an electric mixer until stiff peaks form.

3. Gently fold the whipped cream into the cooled white chocolate until no streaks remain.

4. Carefully fold in 1 cup of the fresh raspberries, reserving the remaining raspberries for garnish.

5. Spoon the raspberry and white chocolate mousse into individual serving dishes or a large serving bowl.

6. Refrigerate for at least 2 hours, or until set.

7. Serve chilled, garnished with the remaining fresh raspberries.

Notes

For a more intense raspberry flavor, you can puree the remaining raspberries and swirl it through the mousse before refrigerating. This dessert can be made up to 3 days in advance and stored in the refrigerator.
