Ingredients

– 3 cups sliced yellow squash

– 1 cup sliced zucchini

– 1 cup chopped onion

– 2 cloves garlic, minced

– 2 cups shredded cheddar cheese

– 1 cup sour cream

– 1 can (10.75 oz) cream of mushroom soup

– 1/2 cup panko breadcrumbs

– 2 tablespoons butter, melted

– 1 teaspoon dried thyme

– Salt and pepper to taste


Instructions

1. – Preheat the oven to 375°F.

2. – In a large bowl, combine the sliced squash, zucchini, onion, and garlic.

3. – In a separate bowl, mix the cheddar cheese, sour cream, and cream of mushroom soup.

4. – Add the cheese mixture to the vegetable mixture and stir until well combined.

5. – Transfer the mixture to a greased 9×13 inch baking dish.

6. – In a small bowl, mix the melted butter and panko breadcrumbs. Sprinkle the breadcrumb mixture over the top of the casserole.

7. – Bake for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.

8. – Sprinkle with fresh thyme and serve hot.

Notes

For a creamier texture, use a blend of cheeses such as cheddar and Parmesan. You can also add cooked chicken or diced ham for a heartier main dish. This casserole can be made ahead and refrigerated or frozen for later use.
