Ingredients
– 1 box red velvet cake mix
– 8 oz cream cheese, softened
– 1/2 cup granulated sugar
– 1 egg
– 1 tsp vanilla extract
– 3 cups sushi rice, cooked and cooled
– 1/4 cup unsweetened cocoa powder
– Fresh raspberries, for garnish
Instructions
1. Preheat oven to 350°F. Prepare the red velvet cake mix according to package instructions and bake in a 9×13 inch pan. Allow to cool completely.
2. In a medium bowl, beat the cream cheese with a hand mixer until smooth and creamy. Add in the sugar, egg, and vanilla extract, and mix until well combined.
3. Crumble the cooled red velvet cake into the cream cheese mixture and stir until fully incorporated.
4. Spread a thin layer of the red velvet cheesecake mixture onto a sushi rolling mat. Top with a layer of sushi rice, pressing down gently to adhere.
5. Carefully roll the sushi, using the mat to help tightly roll the mixture. Slice the roll into 8 equal pieces.
6. Arrange the red velvet cheesecake sushi rolls on a platter and dust with the unsweetened cocoa powder. Garnish with fresh raspberries.
7. Chill the rolls in the refrigerator for at least 30 minutes before serving to allow the cheesecake to set.
Notes
