Description
Remi’s Ratatouille Soup is a flavorful and comforting dish that celebrates the fresh flavors of a classic French ratatouille. Simmered to perfection, this soup features a variety of tender vegetables in a savory broth, perfect for a cozy meal.
Ingredients
– 2 tablespoons olive oil
– 1 large onion, diced
– 3 cloves garlic, minced
– 1 eggplant, diced
– 1 zucchini, diced
– 1 bell pepper, diced
– 2 tomatoes, diced
– 4 cups vegetable broth
– 1 teaspoon dried thyme
– 1 teaspoon dried basil
– Salt and pepper to taste
– Fresh basil for garnish
Instructions
1. In a large pot, heat the olive oil over medium heat.
2. Add the diced onion and sauté for 3-4 minutes until translucent.
3. Stir in the minced garlic and cook for an additional minute.
4. Add the diced eggplant, zucchini, bell pepper, and tomatoes. Sauté for 5-7 minutes, stirring occasionally, until the vegetables start to soften.
5. Pour in the vegetable broth and stir in the dried thyme and basil. Season with salt and pepper to taste.
6. Bring the soup to a simmer and let it cook for 15-20 minutes, or until the vegetables are tender.
7. Ladle the Remi’s Ratatouille Soup into bowls and garnish with fresh basil.
Notes
This soup can be made in advance and stored in the refrigerator for up to 4 days. It can also be frozen for longer storage. Feel free to adjust the vegetables to your liking, adding or substituting with other seasonal produce.
