Crispy, golden-brown Reuben Balls filled with corned beef, Swiss cheese, and sauerkraut, served with a creamy, spicy Thousand Island dipping sauce. A delicious and impressive appetizer that’s perfect for parties and gatherings.
Ingredients
– 1 lb corned beef, finely chopped
– 1 cup shredded Swiss cheese
– 1 cup sauerkraut, drained and chopped
– 1 cup panko breadcrumbs
– 2 eggs, beaten
– 1 tbsp Dijon mustard
– 1 tsp garlic powder
– 1/2 tsp caraway seeds (optional)
– 1/4 tsp salt
– 1/4 tsp black pepper
– Vegetable oil for frying
For the Spicy Thousand Island Dipping Sauce:
– 1 cup mayonnaise
– 1/2 cup ketchup
– 2 tbsp dill pickle relish
– 1 tbsp Dijon mustard
– 1 tbsp hot sauce (such as Sriracha)
– 1 tbsp lemon juice
– 1/2 tsp garlic powder
– 1/4 tsp salt
Instructions
1. 1. In a large bowl, mix together the chopped corned beef, shredded Swiss cheese, chopped sauerkraut, panko breadcrumbs, beaten eggs, Dijon mustard, garlic powder, caraway seeds (if using), salt, and black pepper until well combined.
2. 2. Scoop the mixture by the tablespoonful and roll into 1-inch balls.
3. 3. In a large skillet, heat 1-2 inches of vegetable oil over medium-high heat.
4. 4. Working in batches, fry the Reuben Balls for 2-3 minutes per side, or until golden brown and crispy.
5. 5. Transfer the fried Reuben Balls to a paper towel-lined plate to drain excess oil.
6. 6. For the Spicy Thousand Island Dipping Sauce, whisk together the mayonnaise, ketchup, pickle relish, Dijon mustard, hot sauce, lemon juice, garlic powder, and salt in a small bowl.
7. 7. Serve the Reuben Balls warm, with the Spicy Thousand Island Dipping Sauce on the side for dipping.

– For a creamier dipping sauce, add an extra tablespoon of mayonnaise.
