Ingredients

– 2 tablespoons olive oil

– 1 large onion, diced

– 3 cloves garlic, minced

– 1 medium head of green cabbage, sliced into 1-inch pieces

– 1 cup long-grain white rice

– 1 (14.5 oz) can diced tomatoes

– 2 cups vegetable or chicken broth

– 1 teaspoon dried oregano

– 1/2 teaspoon ground cinnamon

– Salt and black pepper to taste

– Chopped parsley and lemon wedges for garnish


Instructions

1. Heat the olive oil in a large skillet or Dutch oven over medium heat.

2. Add the diced onion and sauté for 5 minutes, until translucent.

3. Stir in the minced garlic and cook for 1 minute, until fragrant.

4. Add the sliced cabbage and continue to sauté for 5-7 minutes, until the cabbage starts to soften.

5. Pour in the diced tomatoes, vegetable or chicken broth, oregano, and cinnamon. Season with salt and black pepper to taste.

6. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20 minutes.

7. Uncover, stir in the uncooked rice, and continue to simmer for an additional 15-20 minutes, or until the rice is tender and the liquid is absorbed.

8. Remove from heat and let the dish rest for 5 minutes.

9. Serve hot, garnished with chopped parsley and lemon wedges.

Notes

This dish can be made in advance and reheated. You can also add some crumbled feta cheese or a drizzle of olive oil for extra flavor.
