Description

These Ricotta Pistachio Honey Bites are a delightful, creamy, and nutty appetizer that comes together in just 10 minutes. Featuring a sweet and savory combination of ricotta cheese, roasted pistachios, and a drizzle of honey, they make the perfect bite-sized treat for any occasion.


Ingredients

    • 1 cup of whole milk ricotta cheese

    • 1/2 cup of shelled and chopped pistachios

    • 2 tablespoons of honey

    • 1/4 teaspoon of vanilla extract

    • A pinch of salt


Instructions

1- In a medium-sized mixing bowl, combine the 1 cup of whole milk ricotta cheese, 1/2 cup of shelled and chopped pistachios, 2 tablespoons of honey, 1/4 teaspoon of vanilla extract, and a pinch of salt. Use a spoon to mix the ingredients together until they’re well incorporated.

2- Scoop the mixture by the tablespoonful and gently roll it into small, bite-sized balls. Place the 12 bites on a plate or baking sheet.

3- Once all 12 bites are formed, let them chill in the refrigerator for 5 minutes to firm up.

4- Look for the bites to have a smooth, uniform shape and a slight sheen from the honey.

5- Drizzle the top of the Ricotta Pistachio Honey Bites with a bit of extra honey, if desired, for added sweetness.

6- Serve the 12 Ricotta Pistachio Honey Bites immediately and enjoy every delightful bite!

Notes

For a fun presentation, you can top the ricotta bites with an extra sprinkle of chopped pistachios. These are best served immediately, but any leftovers can be stored in the refrigerator for up to 3 days.
