Ingredients
– 1 lb asparagus, trimmed and cut into 1-inch pieces
– 1 lb radishes, halved or quartered
– 2 tbsp olive oil
– 1 tsp kosher salt
– 1/2 tsp freshly ground black pepper
Instructions
1. – Preheat oven to 400°F (200°C).
2. – In a large bowl, toss the asparagus and radishes with the olive oil, salt, and pepper until evenly coated.
3. – Spread the vegetables in a single layer on a large baking sheet.
4. – Roast for 20-25 minutes, stirring halfway, until the vegetables are tender and lightly browned.
5. – Serve hot, garnished with freshly chopped herbs if desired.
