Description

Ingredients

– 1 lb carrots, peeled and cut into 1-inch pieces

– 2 tbsp olive oil

– 1 tsp salt

– 1/2 tsp black pepper

– 1 cup whole milk ricotta

– 2 tbsp heavy cream

– 1 tbsp honey

– 1 tbsp hot sauce (such as Sriracha)


Instructions

1. 1. Preheat oven to 400°F.

2. 2. Toss the carrot pieces with olive oil, salt, and pepper on a large baking sheet.

3. 3. Roast the carrots for 20-25 minutes, or until tender and lightly caramelized.

4. 4. In a small bowl, whisk together the ricotta, heavy cream, honey, and hot sauce until smooth and creamy.

5. 5. Serve the roasted carrots warm, topped with the whipped ricotta mixture and an additional drizzle of hot honey.

Notes

This dish can be served as a side or as a dip with crusty bread. For a milder version, reduce the amount of hot sauce. The whipped ricotta mixture can be made ahead and stored in the refrigerator for up to 3 days.
