Description

Ingredients

– 1 lb carrots, peeled and cut into 1-inch pieces

– 2 tbsp olive oil

– 1 tsp ground cumin

– 1 tsp garlic powder

– Salt and pepper to taste

– 1 cup ricotta cheese

– 2 tbsp honey

– 1 tsp red pepper flakes


Instructions

1. – Preheat the oven to 400°F (200°C).

2. – In a large bowl, toss the carrots with the olive oil, cumin, garlic powder, salt, and pepper until well coated.

3. – Spread the carrots in a single layer on a baking sheet and roast for 20-25 minutes, or until tender and caramelized.

4. – In a small bowl, mix the ricotta, honey, and red pepper flakes until well combined.

5. – Serve the roasted carrots warm, topped with the whipped ricotta and a drizzle of the hot honey mixture.

Notes

– For a spicier version, increase the amount of red pepper flakes.
