Description

Tender, juicy roasted steaks topped with a bright and flavorful mint gremolata – the perfect quick and easy weeknight dinner.


Ingredients

– 2 pounds beef tenderloin or ribeye steaks, about 1-inch thick

– 2 tablespoons olive oil

– 2 cloves garlic, minced

– 1 cup fresh parsley, finely chopped

– 1/2 cup fresh mint leaves, finely chopped

– 2 tablespoons lemon zest

– 1 tablespoon lemon juice

– 1/2 teaspoon sea salt

– 1/4 teaspoon black pepper


Instructions

1. Preheat oven to 450°F.

2. Pat the steaks dry and season generously with salt and pepper.

3. Heat a large oven-safe skillet over high heat. Add the olive oil and sear the steaks for 2-3 minutes per side until a nice crust forms.

4. Transfer the skillet to the preheated oven and roast the steaks for 8-10 minutes for medium-rare, or until they reach your desired doneness.

5. While the steaks are roasting, make the mint gremolata. In a small bowl, combine the garlic, parsley, mint, lemon zest, and lemon juice. Mix well.

6. Remove the steaks from the oven and let rest for 5 minutes. Slice the steaks and top with the mint gremolata.

7. Serve immediately and enjoy!

Notes

For best results, use fresh, high-quality ingredients. The gremolata can be made ahead of time and refrigerated until ready to use. Leftover steak and gremolata can be stored separately in the fridge for up to 3 days.
