Description
Rutabagas Romanoff is a delicious and creamy side dish that’s quick and easy to make. Tender rutabagas are sautéed with onions and garlic, then coated in a rich, sour cream-based sauce for a comforting and flavorful addition to any meal.
Ingredients
– 2 pounds rutabagas, peeled and cubed
– 1 onion, diced
– 3 cloves garlic, minced
– 1 cup sour cream
– 2 tablespoons butter
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 cup chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil. Add the cubed rutabagas and cook until tender, about 15-20 minutes. Drain and set aside.
2. In a large skillet, melt the butter over medium heat. Add the onions and sauté for 5-7 minutes, until translucent.
3. Add the minced garlic and cook for 1 minute, until fragrant.
4. Stir in the cooked rutabagas and sour cream. Season with salt and pepper.
5. Cook for an additional 5 minutes, stirring occasionally, until the sauce is heated through and the rutabagas are coated.
6. Remove from heat and stir in the chopped parsley.
7. Serve hot as a side dish.
Notes
For a creamier texture, you can add an extra 1/4 cup of sour cream. You can also experiment with different herbs, such as dill or chives, for variation.
