Ingredients
– 15 oz canned salmon, drained and flaked
– 1 cup panko breadcrumbs
– 2 large eggs, lightly beaten
– 1/2 cup finely chopped onion
– 2 cloves garlic, minced
– 1 teaspoon Dijon mustard
– 1/2 teaspoon dried dill
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
– 2 tablespoons olive oil for frying
Instructions
1. – In a large bowl, combine the flaked salmon, panko breadcrumbs, eggs, onion, garlic, Dijon mustard, dried dill, salt, and pepper. Mix well until all the ingredients are evenly distributed.
2. – Form the mixture into 8 equal-sized patties, about 1/2 inch thick.
3. – Heat the olive oil in a large skillet over medium heat. Working in batches if necessary, cook the Salmon Patties for 3-4 minutes per side, or until golden brown and crispy.
4. – Drain the cooked patties on a paper towel-lined plate. Serve hot, garnished with lemon wedges and your favorite toppings.
Notes
For best results, use high-quality canned salmon. You can also bake the patties in the oven at 400°F for 12-15 minutes, flipping halfway through. Leftovers can be stored in the refrigerator for up to 3 days.
