Ingredients

– 1 sheet puff pastry, thawed

– 8 ounces breakfast sausage, cooked and crumbled

– 6 large eggs

– 1/4 cup shredded cheddar cheese

– 1 tablespoon chopped fresh parsley

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper


Instructions

1. Preheat oven to 400°F. Grease a 12-cup muffin tin.

2. Roll out the puff pastry on a lightly floured surface to a 12×12-inch square. Cut the pastry into 12 equal squares.

3. Gently press the pastry squares into the prepared muffin cups, pressing the dough up the sides to create a nest.

4. In a medium bowl, whisk together the eggs, cheese, parsley, salt, and pepper.

5. Divide the sausage evenly among the pastry cups, then pour the egg mixture over the top.

6. Bake for 18-20 minutes, or until the pastry is golden brown and the eggs are set.
