Ingredients
– 1 lb Italian sausage, sliced into 1-inch pieces
– 3 medium sweet potatoes, peeled and cubed
– 2 tbsp olive oil
– 3 cloves garlic, minced
– 1/4 cup honey
– 2 tbsp soy sauce
– 1 tsp dried thyme
– Salt and pepper to taste
Instructions
1. – Preheat oven to 400°F. Line a baking sheet with parchment paper.
2. – In a large bowl, toss the sausage and sweet potato cubes with olive oil, salt, and pepper.
3. – Spread the mixture in a single layer on the prepared baking sheet.
4. – Roast for 20-25 minutes, stirring halfway, until the sausage is cooked through and the sweet potatoes are tender.
5. – In a small bowl, whisk together the garlic, honey, and soy sauce.
6. – Remove the sausage and sweet potatoes from the oven and drizzle the honey garlic sauce over the top. Toss to coat.
7. – Sprinkle with dried thyme and serve immediately.
