Ingredients
– 1 lb Italian sausage, casings removed
– 1 onion, diced
– 3 cloves garlic, minced
– 4 cups chicken broth
– 3 cups peeled and diced potatoes
– 1 cup heavy cream
– 1 tsp dried thyme
– 1 tsp dried oregano
– Salt and pepper to taste
– Chopped parsley for garnish
Instructions
1. – In a large pot or Dutch oven, cook the sausage over medium heat until browned and crumbled, 5-7 minutes.
2. – Add the onion and garlic to the pot and sauté until the onion is translucent, about 3-4 minutes.
3. – Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, 15-20 minutes.
4. – Stir in the heavy cream, thyme, and oregano. Season with salt and pepper to taste.
5. – Simmer the soup for an additional 5 minutes to allow the flavors to meld.
6. – Ladle the soup into bowls and garnish with chopped parsley before serving.
