Ingredients
2 medium zucchini, sliced into half-moons
8 ounces mushrooms, sliced
1 large onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. In a large skillet, heat the olive oil over medium-high heat.
2. Add the sliced zucchini, mushrooms, and diced onion. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender and lightly browned.
