Ingredients
– 3 pounds sweet potatoes, peeled and sliced 1/4-inch thick
– 1 cup heavy cream
– 1 cup shredded cheddar cheese
– 1/2 cup grated Parmesan cheese
– 3 tablespoons unsalted butter, melted
– 2 cloves garlic, minced
– 1 teaspoon dried thyme
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.
2. In a large bowl, combine the sliced sweet potatoes, heavy cream, cheddar cheese, Parmesan cheese, melted butter, garlic, thyme, salt, and pepper. Toss gently to coat.
3. Transfer the sweet potato mixture to the prepared baking dish, spreading it out evenly.
4. Cover the dish with foil and bake for 30 minutes.
5. Remove the foil and continue baking for 25-30 minutes, or until the sweet potatoes are tender and the top is golden brown.
6. Let the casserole cool for 5 minutes before serving.
