Ingredients
– 2 cups all-purpose flour
– 1/2 teaspoon salt
– 3/4 cup unsalted butter, chilled and cubed
– 1/4 cup ice water
– 24 ounces cream cheese, softened
– 1 cup granulated sugar
– 2 eggs
– 1 teaspoon vanilla extract
– 1/4 cup heavy cream
– 1 tablespoon green food coloring
Instructions
1. In a food processor, pulse the flour and salt together. Add the chilled butter cubes and pulse until the mixture resembles coarse crumbs. Slowly add the ice water and pulse until the dough just begins to hold together.
2. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
3. Preheat the oven to 375°F. Roll out the dough and fit it into a 9-inch pie plate. Crimp the edges and chill for 30 minutes.
4. In a large bowl, beat the cream cheese and sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and heavy cream.
5. Divide the filling into two bowls. Stir the green food coloring into one half of the filling.
6. Spoon the plain and green-tinted fillings into the prepared pie crust, creating a swirled pattern.
7. Bake for 40-45 minutes, until the center is almost set. Allow to cool completely before serving.
Notes
For a more pronounced shamrock flavor, you can add 1 teaspoon of mint extract to the filling. Serve chilled or at room temperature.
