Description

This vibrant Shaved Asparagus & Fennel Salad is a refreshing and crunchy summer delight. Shaved asparagus and fennel are tossed in a bright lemon dressing for a light and flavorful starter or side.


Ingredients

– 1 pound asparagus, shaved or thinly sliced

– 1 large fennel bulb, shaved or thinly sliced

– 1/4 cup olive oil

– 2 tablespoons lemon juice

– 1 tablespoon Dijon mustard

– 1 teaspoon honey

– Salt and pepper to taste

– Chopped parsley, for garnish


Instructions

1. In a large bowl, combine the shaved asparagus and fennel.

2. In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and honey. Season with salt and pepper.

3. Pour the dressing over the asparagus and fennel, and toss gently to coat.
