Ingredients
– 4 cups shredded rainbow carrots
– 2 tablespoons toasted sesame seeds

– 1 tablespoon rice vinegar
– 1 teaspoon honey
– 1 teaspoon Dijon mustard
– 1 clove garlic, minced
– Salt and pepper to taste
– 2 tablespoons chopped fresh cilantro or parsley (optional)
Instructions
1. In a large bowl, combine the shredded rainbow carrots and toasted sesame seeds.
2. In a small bowl, whisk together the olive oil, rice vinegar, honey, Dijon mustard, and minced garlic. Season with salt and pepper to taste.

Notes
