Ingredients

– 1 pound large shrimp, peeled and deveined

– 2 cups chicken broth

– 1 cup stone-ground grits

– 2 tablespoons butter

– 1/2 cup heavy cream

– 1/2 cup shredded cheddar cheese

– 2 tablespoons Cajun seasoning

– 1 tablespoon olive oil

– 2 cloves garlic, minced

– 1/4 cup chopped green onions

– 2 tablespoons chopped fresh parsley


Instructions

1. In a medium saucepan, bring the chicken broth to a boil. Slowly whisk in the grits and reduce heat to low. Cook, stirring occasionally, until the grits are creamy and tender, about 15-20 minutes.

2. Remove the grits from heat and stir in the butter, heavy cream, and cheddar cheese until well combined. Season with salt and pepper to taste. Cover and keep warm.

3. In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and Cajun seasoning, and sauté for 2-3 minutes per side, until the shrimp are pink and opaque.

4. Add the minced garlic and green onions to the skillet and cook for an additional minute, stirring constantly.

5. Serve the Cajun shrimp immediately over the creamy grits, garnished with fresh chopped parsley.

Notes

For a spicier dish, add more Cajun seasoning to the shrimp. You can also try using different types of cheese, such as Parmesan or Monterey Jack, in the grits.
