Description

Shrimp Rice with Herbs (Meygoo Polo) is a quick and flavorful Persian-inspired dish that combines tender shrimp, fragrant herbs, and fluffy rice for a mouthwatering meal perfect for busy weeknights or special occasions.


Ingredients

– 1 pound large shrimp, peeled and deveined

– 2 cups basmati rice

– 1 onion, finely chopped

– 3 cloves garlic, minced

– 1/4 cup chopped fresh parsley

– 1/4 cup chopped fresh dill

– 1/4 cup chopped fresh cilantro

– 2 tablespoons olive oil

– 1 teaspoon ground turmeric

– 1 teaspoon ground cinnamon

– 1/2 teaspoon ground saffron (optional)

– Salt and pepper to taste

– Lemon wedges for serving


Instructions

1. Rinse the rice in a fine-mesh sieve until the water runs clear. Soak the rice in water for 30 minutes, then drain.

2. In a large skillet, heat the olive oil over medium-high heat. Add the onion and sauté for 3-4 minutes until translucent.

3. Add the garlic and sauté for 1 minute until fragrant.

4. Add the shrimp, turmeric, cinnamon, and saffron (if using). Cook, stirring occasionally, for 3-4 minutes until the shrimp are partially cooked.

5. Stir in the drained rice, parsley, dill, and cilantro. Season with salt and pepper to taste.

6. Reduce heat to low, cover, and cook for 15-20 minutes, or until the rice is tender and the shrimp are fully cooked.

7. Serve the Shrimp Rice with Herbs (Meygoo Polo) warm, with lemon wedges on the side.

Notes

For a deeper flavor, toast the rice in the skillet for 2-3 minutes before adding the liquid. You can also substitute other herbs, such as basil or mint, based on your preferences.
