Description

Shrimp Scampi is a classic Italian-American dish that features succulent shrimp simmered in a rich, garlic-infused butter sauce. This express version delivers all the restaurant-quality flavor in just 30 minutes, making it the perfect easy weeknight meal.


Ingredients

– 1 pound large shrimp, peeled and deveined

– 4 cloves garlic, minced

– 1/4 cup unsalted butter

– 1/4 cup dry white wine

– 2 tablespoons freshly squeezed lemon juice

– 2 tablespoons chopped fresh parsley

– 1/4 teaspoon red pepper flakes (optional)

– Salt and freshly ground black pepper, to taste

– 8 ounces linguine pasta, cooked according to package instructions


Instructions

1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain and set aside.

2. In a large skillet, melt the butter over medium-high heat. Add the garlic and sauté for 1 minute, until fragrant.

3. Add the shrimp to the skillet and cook for 2-3 minutes per side, until they just begin to turn pink and curl.

4. Pour in the white wine and lemon juice. Simmer for 2-3 minutes, until the sauce has slightly thickened.

5. Remove the skillet from heat and stir in the chopped parsley and red pepper flakes (if using). Season with salt and pepper to taste.

6. Serve the Shrimp Scampi immediately over the cooked linguine.

Notes

– For a creamier sauce, stir in 2 tablespoons of heavy cream at the end.

– Garnish with additional lemon wedges and chopped parsley.

– Pair with a crisp white wine for a complete, elegant meal.
