Ingredients
– 1 pound fresh green beans, trimmed and cut into 2-inch pieces
– 2 tablespoons vegetable oil
– 3 cloves garlic, minced
– 1 tablespoon grated fresh ginger
– 2 tablespoons soy sauce
– 1 tablespoon chili oil (or to taste)
– 1 teaspoon rice vinegar
– 1/2 teaspoon sugar
– Salt and white pepper to taste
Instructions
1. Heat the vegetable oil in a large wok or skillet over high heat.
2. Add the green beans and stir-fry for 3-4 minutes, until they start to blister and char slightly.
3. Add the garlic and ginger and continue stir-frying for 1 minute, until fragrant.
4. In a small bowl, whisk together the soy sauce, chili oil, rice vinegar, and sugar.
5. Pour the sauce into the wok and toss the green beans to coat evenly. Cook for an additional 2-3 minutes, until the sauce thickens and the beans are tender-crisp.
6. Season with salt and white pepper to taste.
