Description
This Simple Baba Ghanoush is a creamy, smoky eggplant dip that’s a perfect healthy appetizer or snack. It’s easy to make at home with just a few simple ingredients.
Ingredients
– 1 large eggplant
– 2 tablespoons tahini
– 2 tablespoons lemon juice
– 1 clove garlic, minced
– 1/4 teaspoon ground cumin
– 1/4 teaspoon salt
– 2 tablespoons chopped parsley
Instructions
1. – Preheat oven to 400°F (200°C).
2. – Pierce the eggplant several times with a fork and place on a baking sheet. Roast for 30-40 minutes, or until very soft.
3. – Allow the eggplant to cool slightly, then cut in half and scoop out the flesh into a food processor.
4. – Add the tahini, lemon juice, garlic, cumin, and salt. Blend until smooth and creamy.
5. – Transfer to a serving bowl and garnish with chopped parsley.
6. – Serve with pita bread, veggies, or your favorite dippers.
Notes
For a creamier texture, add an extra tablespoon of tahini. For a smoky flavor, you can also char the eggplant over an open flame before roasting.
