Ingredients
– 2 lbs boneless, skinless chicken thighs
– 2 tbsp olive oil
– 2 tsp ground cumin
– 2 tsp smoked paprika
– 1 tsp ground coriander
– 1 tsp garlic powder
– 1 tsp onion powder
– 1 tsp salt
– 1/2 tsp black pepper
– 1/4 tsp cayenne pepper (optional)
– 2 cloves garlic, minced
– Juice of 1 lemon
– Chopped parsley, for serving
– Warm pita bread, for serving
Instructions
1. – Place the chicken thighs in a slow cooker.
2. – In a small bowl, mix together the olive oil, cumin, paprika, coriander, garlic powder, onion powder, salt, pepper, and cayenne (if using).
3. – Rub the spice mixture all over the chicken, making sure to coat it evenly.
4. – Add the minced garlic and lemon juice to the slow cooker, and stir to combine.
5. – Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is very tender.
6. – Shred the chicken using two forks, then serve immediately with chopped parsley and warm pita bread.
Notes
– For extra flavor, you can brown the chicken in a skillet before adding it to the slow cooker.
– Adjust the spices to your taste, adding more or less of each to suit your preferences.
– Leftovers can be stored in an airtight container in the refrigerator for up to 4 days.
