Description

Tender, flavorful slow cooker corned beef and cabbage is the ultimate comfort food. This classic Irish dish is perfect for St. Patrick’s Day or any time you crave a hearty, satisfying meal.


Ingredients

– 3 pounds corned beef brisket

– 1 head green cabbage, chopped into 1-inch pieces

– 4 carrots, peeled and cut into 1-inch pieces

– 3 potatoes, peeled and cut into 1-inch pieces

– 1 onion, diced

– 2 cloves garlic, minced

– 1 cup beef broth

– 2 tablespoons apple cider vinegar

– 1 teaspoon black pepper

– 1 bay leaf


Instructions

1. Place the corned beef brisket in the slow cooker.

2. Arrange the chopped cabbage, carrots, potatoes, onion, and garlic around the corned beef.

3. Pour the beef broth and apple cider vinegar over the ingredients.

4. Season with black pepper and add the bay leaf.

5. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the corned beef is very tender.

6. Remove the corned beef from the slow cooker and slice or shred it.

7. Serve the corned beef and vegetables warm, garnished with fresh parsley if desired.

Notes

– For extra flavor, you can add 1 teaspoon of caraway seeds or 1 tablespoon of Dijon mustard to the slow cooker.

– Leftovers can be stored in an airtight container in the refrigerator for 3-4 days.
