This Slow Cooker Lasagna Soup is the ultimate comfort food. Bursting with classic lasagna flavors, this hearty and cheesy soup simmers to perfection in your crockpot, making it a breeze to prepare for a cozy weeknight dinner.
Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 1 can (28 oz) crushed tomatoes
– 1 can (15 oz) tomato sauce
– 4 cups beef broth
– 2 cups water
– 2 tsp dried oregano
– 1 tsp dried basil
– 1/2 tsp red pepper flakes (optional)
– Salt and pepper to taste
– 8 oz lasagna noodles, broken into 1-inch pieces
– 1 cup shredded mozzarella cheese
– 1/2 cup grated Parmesan cheese
– Chopped fresh basil for garnish
Instructions
1. – In a large skillet, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain excess fat.
2. – Add the onion and garlic to the skillet and cook for 2-3 minutes, until fragrant.
3. – Transfer the beef mixture to a slow cooker.
4. – Add the crushed tomatoes, tomato sauce, beef broth, water, oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
5. – Cover and cook on low for 6-8 hours or on high for 3-4 hours.
6. – During the last 30 minutes of cooking, stir in the lasagna noodle pieces.
7. – Ladle the soup into bowls and top with mozzarella and Parmesan cheeses.
8. – Garnish with chopped fresh basil before serving.
Notes
– For a thicker soup, use less water or let it simmer longer.
– Adjust spices to your preference.
