Description

Ingredients

– 1/2 cup olive oil

– 8 cloves garlic, minced

– 4 cups chicken or vegetable broth

– 4 slices day-old bread, cubed

– 2 eggs, poached or fried

– 2 tablespoons chopped parsley

– Salt and pepper to taste


Instructions

1. In a large saucepan, heat the olive oil over medium heat.

2. Add the minced garlic and sauté for 2-3 minutes, until fragrant and lightly golden.

3. Pour in the broth and bring to a simmer.

4. Add the cubed bread and let it soak up the broth for 5-7 minutes.

5. Remove from heat and ladle the soup into bowls.

6. Top each serving with a poached or fried egg and a sprinkle of chopped parsley.

7. Season with salt and pepper to taste.

Notes

For a thicker consistency, you can mash some of the softened bread cubes against the side of the pot. Additionally, you can experiment with different types of bread or add a dash of sherry vinegar for extra flavor.
