Ingredients

– 1 pound spicy chorizo, sliced

– 1 onion, diced

– 3 cloves garlic, minced

– 2 cans (15 oz each) pumpkin puree

– 4 cups chicken or vegetable broth

– 1 teaspoon ground cumin

– 1 teaspoon smoked paprika

– 1/4 teaspoon cayenne pepper (or to taste)

– Salt and black pepper to taste

– Chopped fresh cilantro, for garnish

– Swirl of heavy cream, for garnish


Instructions

1. In a large pot or Dutch oven, cook the chorizo over medium heat until browned and crispy, about 5-7 minutes.

2. Add the diced onion and minced garlic to the pot and sauté until the onion is translucent, about 3-4 minutes.

3. Stir in the pumpkin puree, chicken or vegetable broth, cumin, smoked paprika, and cayenne pepper. Bring the mixture to a simmer.

4. Reduce the heat to low and let the soup simmer for 10-15 minutes, stirring occasionally, until the flavors have melded.
