Ingredients
– 24 medium-sized cremini or button mushrooms, stems removed and finely chopped
– 1 boneless, skinless chicken breast, cooked and shredded
– 4 oz cream cheese, softened
– 1/4 cup grated Parmesan cheese
– 1 cup fresh spinach, chopped
– 2 cloves garlic, minced
– 1/4 teaspoon dried thyme
– 1/4 teaspoon salt
– 1/8 teaspoon black pepper
Instructions
1. 1. Preheat the oven to 375°F (190°C).
2. 2. In a medium bowl, combine the chopped mushroom stems, shredded chicken, cream cheese, Parmesan, spinach, garlic, thyme, salt, and pepper. Mix until well blended.
3. 3. Spoon the filling mixture into the hollowed-out mushroom caps, dividing it evenly.
