Ingredients
– 1 sheet puff pastry, thawed
– 1 cup fresh spinach, chopped
– 1/2 cup crumbled feta cheese
– 1 egg, beaten
– 1 tablespoon water
Instructions
1. 1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. 2. Unfold the puff pastry sheet and place it on a lightly floured surface. Roll the pastry into a 12×12-inch square.
3. 3. In a small bowl, mix together the chopped spinach and crumbled feta cheese.
4. 4. Cut the puff pastry sheet into 12 equal strips, each about 1-inch wide.
5. 5. Place a heaping tablespoon of the spinach-feta mixture onto the center of each strip.
6. 6. Fold the pastry over the filling, then twist the pastry several times to create a spiral shape.
7. 7. Place the twisted pastries on the prepared baking sheet, spacing them about 2 inches apart.
8. 8. In a small bowl, whisk together the egg and water to make an egg wash. Brush the tops of the pastries with the egg wash.
9. 9. Bake for 18-20 minutes, or until the pastries are golden brown.
10. 10. Serve the Spinach and Feta Puff Pastry Twists warm, garnished with extra feta cheese or fresh herbs if desired.
