Ingredients

– 2 cups all-purpose flour

– 1 teaspoon salt

– 1 tablespoon granulated sugar

– 1 package (2 1/4 teaspoons) active dry yeast

– 3/4 cup warm water

– 2 tablespoons olive oil

– 10 ounces fresh spinach, finely chopped

– 1 cup ricotta cheese

– 1/2 cup grated parmesan cheese

– 1 egg, beaten


Instructions

1. In a large mixing bowl, combine the flour, salt, sugar, and yeast. Add the warm water and olive oil, and knead until a smooth dough forms. Cover and let rise for 1 hour.

2. In a separate bowl, mix together the chopped spinach, ricotta, and parmesan cheese.

3. Roll the dough into a large rectangle, about 12×18 inches. Spread the spinach filling evenly over the dough, leaving a 1-inch border.

4. Fold the dough in half lengthwise, then make cuts along the edge at 1-inch intervals, leaving the center uncut. Twist each strip a few times and overlap the ends to create a braided effect.

5. Transfer the braided bread to a parchment-lined baking sheet. Cover and let rise for 30 minutes.

6. Preheat the oven to 375°F. Brush the bread with the beaten egg.

7. Bake for 25-30 minutes, until golden brown. Allow to cool slightly before slicing and serving.

Notes

For a more intense flavor, you can add a pinch of nutmeg to the spinach filling. This bread also pairs well with a creamy garlic dipping sauce.
