Ingredients
– 1 lb beef sirloin, cut into 1-inch cubes
– 1 large onion, diced
– 2 cloves garlic, minced
– 1 tsp dried thyme
– 1 tsp dried rosemary
– 1 tsp salt
– 1/2 tsp black pepper
– 1 cup beef broth
– 2 tbsp all-purpose flour
– 1 package refrigerated pie crust
Instructions
1. 1. Preheat your oven to 400°F (200°C).
2. 2. In a large skillet, sauté the beef over medium-high heat until browned, about 5-7 minutes. Remove the beef from the skillet and set aside.
3. 3. In the same skillet, cook the onions and garlic until softened, about 3-5 minutes.
4. 4. Sprinkle the flour over the onion mixture and stir to coat. Gradually pour in the beef broth, whisking constantly to prevent lumps.
5. 5. Bring the mixture to a simmer and cook until thickened, about 2-3 minutes.
6. 6. Return the browned beef to the skillet and stir to combine. Season with thyme, rosemary, salt, and pepper.
7. 7. Unroll the pie crusts and press one into a 9-inch pie dish, letting the excess hang over the edges.
8. 8. Spoon the beef mixture into the pie crust. Top with the remaining pie crust, crimp the edges to seal, and cut several slits in the top to allow steam to escape.
9. 9. Bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
10. 10. Let the pie cool for 10 minutes before slicing and serving.
Notes
For a richer flavor, use a blend of beef and pork. You can also add diced potatoes or carrots to the filling for extra heartiness.
