Steak Queso Rice is a quick and easy-to-make Mexican-inspired dish that’s perfect for busy weeknights. Tender steak, melty queso, and fluffy white rice come together in a delicious and satisfying meal.
Ingredients
– 1 lb flank steak, cut into 1-inch pieces
– 1 onion, diced
– 1 bell pepper, diced
– 2 cups cooked white rice
– 1 cup queso dip
– 1 tsp chili powder
– 1 tsp cumin
– 1/2 tsp garlic powder
– Salt and pepper to taste
– Chopped cilantro for garnish
Instructions
1. 1. In a large skillet, cook the steak over medium-high heat until browned, about 5-7 minutes. Remove steak from the pan and set aside.
2. 2. In the same skillet, sauté the onion and bell pepper until softened, about 5 minutes.
3. 3. Add the cooked steak back to the skillet, then stir in the cooked rice, queso dip, chili powder, cumin, and garlic powder. Season with salt and pepper to taste.
4. 4. Cook for an additional 2-3 minutes, stirring frequently, until the queso is melted and the dish is heated through.
5. 5. Serve immediately, garnished with chopped cilantro.
Notes
This dish can be easily customized with your favorite toppings, such as diced tomatoes, sliced avocado, or shredded cheese. For a spicier version, add more chili powder or a dash of hot sauce.
