Ingredients

– 1 cup (140g) chopped dates

– 1 cup (240ml) boiling water

– 1/2 cup (115g) unsalted butter, softened

– 3/4 cup (150g) brown sugar

– 2 large eggs

– 1 1/2 cups (190g) all-purpose flour

– 1 teaspoon baking soda

– 1/4 teaspoon salt


Instructions

1. Preheat your oven to 350°F (180°C). Grease and flour an 8-inch square baking pan.

2. In a medium bowl, pour the boiling water over the chopped dates and let them soak for 10 minutes.

3. In a large bowl, cream the softened butter and brown sugar until light and fluffy.

4. Beat in the eggs, one at a time, mixing well after each addition.

5. In a separate bowl, whisk together the flour, baking soda, and salt.

6. Drain the soaked dates, reserving the liquid. Add the dates to the butter mixture and mix until well combined.

7. Gradually add the dry ingredients to the wet ingredients, alternating with the reserved date liquid, mixing just until incorporated.

8. Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

9. Allow the pudding to cool slightly before serving. Serve warm with a drizzle of caramel sauce and a scoop of vanilla ice cream, if desired.

Notes

For a richer flavor, you can use dark brown sugar instead of light brown sugar. The pudding can be made in advance and reheated before serving.
