Ingredients

– 2 sheets refrigerated pie crust

– 4 cups fresh strawberries, sliced

– 3/4 cup granulated sugar

– 2 tablespoons cornstarch

– 1 teaspoon vanilla extract

– 1/4 teaspoon salt

– 1 egg, beaten

– 2 tablespoons coarse sugar (for topping)


Instructions

1. 1. Preheat oven to 400°F.

2. 2. Unroll one pie crust and place it in a 9-inch pie plate, pressing it into the bottom and up the sides.

3. 3. In a large bowl, combine the sliced strawberries, granulated sugar, cornstarch, vanilla, and salt. Toss to coat.

4. 4. Spoon the strawberry mixture into the pie crust.

5. 5. Unroll the second pie crust and place it on top of the filling. Crimp the edges to seal and cut several slits in the top crust to allow steam to escape.

6. 6. Brush the top crust with the beaten egg and sprinkle with coarse sugar.

7. 7. Bake for 20-25 minutes, until the crust is golden brown. Reduce heat to 350°F and continue baking for 25-30 minutes, until the filling is bubbling.

8. 8. Allow the pie to cool completely before slicing and serving.

Notes

For a crispier crust, you can also brush the bottom crust with a beaten egg before adding the filling. Serve with a scoop of vanilla ice cream or a dollop of whipped cream for an extra indulgent treat.
