Description

Indulge in the irresistible flavors of a Strawberry Pop Tart in this easy-to-make slab pie format. Perfect for sharing, this handheld treat is bursting with sweet, juicy strawberries and a flaky, buttery crust.

Ingredients

– 2 cups all-purpose flour

– 1 teaspoon salt

– 1 cup unsalted butter, chilled and cubed

– 1/4 cup ice water

– 4 cups fresh strawberries, hulled and sliced

– 1 cup granulated sugar

– 2 tablespoons cornstarch

– 1 tablespoon lemon juice

– 1 egg, beaten

– 2 tablespoons milk

– Powdered sugar for dusting

Instructions

1. 1. In a food processor, combine the flour and salt. Add the chilled butter and pulse until the mixture resembles coarse crumbs.

2. 2. Add the ice water and pulse until the dough just begins to come together. Turn the dough out onto a lightly floured surface and shape into a disk. Wrap in plastic and refrigerate for at least 30 minutes.

3. 3. In a large bowl, toss the sliced strawberries with the granulated sugar, cornstarch, and lemon juice.

4. 4. Roll the chilled dough into a large rectangle, about 12×16 inches. Transfer to a rimmed baking sheet.

5. 5. Spread the strawberry filling evenly over the dough, leaving a 1-inch border.

6. 6. In a small bowl, whisk together the egg and milk. Brush the exposed dough with the egg wash.

7. 7. Bake at 375°F for 35-40 minutes, until the crust is golden brown and the filling is bubbling.

8. 8. Allow to cool for 30 minutes, then dust with powdered sugar before serving.

Notes

For a decorative touch, you can use a pastry cutter or knife to create a lattice pattern on the top crust before baking. Serve the slab pie warm or at room temperature.
