This Strawberry Spinach Salad with Poppyseed Dressing is a bright, refreshing starter that’s bursting with flavor. Juicy strawberries, crisp spinach, and a tangy-sweet poppyseed dressing come together for a restaurant-quality salad that’s ready in just 5 minutes.

Ingredients

– 5 ounces baby spinach

– 1 pint fresh strawberries, sliced

– 1/4 cup sliced almonds

– 2 tablespoons poppy seeds

– 1/4 cup olive oil

– 2 tablespoons apple cider vinegar

– 2 tablespoons honey

– 1 tablespoon Dijon mustard

– 1/4 teaspoon salt

– 1/8 teaspoon black pepper

Instructions

1. In a large salad bowl, combine the spinach, sliced strawberries, and sliced almonds.

2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until well combined.

3. Drizzle the poppyseed dressing over the salad and toss gently to coat.

4. Serve immediately and enjoy!

Notes

For a creamier dressing, you can add 2-3 tablespoons of mayonnaise or sour cream to the poppyseed dressing. You can also add crumbled feta or goat cheese for extra flavor.
