Indulge in the perfect fusion of bold flavors with this Street Corn Chicken Rice Bowl. Tender chicken, roasted corn kernels, and fragrant rice come together in a delightful one-bowl meal that’s quick, easy, and bursting with taste.

Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 2 cups frozen corn kernels

– 1 cup uncooked white rice

– 1 tablespoon olive oil

– 1 teaspoon chili powder

– 1 teaspoon cumin

– 1/2 teaspoon garlic powder

– 1/4 teaspoon paprika

– Salt and pepper to taste

– Chopped cilantro, for garnish

Instructions

1. 1. In a large skillet, heat the olive oil over medium-high heat.

2. 2. Add the cubed chicken and season with chili powder, cumin, garlic powder, paprika, salt, and pepper. Cook until the chicken is fully cooked, about 6-8 minutes.

3. 3. Add the frozen corn kernels to the skillet and continue cooking for an additional 3-4 minutes, until the corn is heated through.

4. 4. Meanwhile, cook the rice according to package instructions.

5. 5. Divide the cooked rice among serving bowls. Top with the chicken and corn mixture.

6. 6. Garnish with fresh chopped cilantro and serve immediately.

Notes

For a creamier texture, stir in a tablespoon of sour cream or Greek yogurt to the chicken and corn mixture before serving. You can also add diced avocado, shredded cheese, or a squeeze of lime juice to enhance the flavors.
