Description

Ingredients

– 2 English cucumbers, sliced into 1/4-inch thick rounds

– 2 tablespoons olive oil

– 1 tablespoon freshly squeezed lemon juice

– 1 teaspoon sumac spice

– 1/4 teaspoon salt

– 2 tablespoons chopped fresh parsley, dill, or mint


Instructions

1. In a large bowl, combine the sliced cucumbers, olive oil, lemon juice, sumac spice, and salt. Toss gently to coat the cucumbers evenly.

2. Let the cucumbers marinate for 5-10 minutes, tossing occasionally, to allow the flavors to meld.

3. Just before serving, sprinkle the chopped fresh herbs over the top and toss gently to combine.

Notes

For best texture, use English or Persian cucumbers, as they have thinner skins and fewer seeds. You can also add a pinch of red pepper flakes for a subtle heat.
